NARRATIVE

The George™ boasts two restaurants on the property, Poppy and Porter’s. Poppy is part of the hotel, undeniably named after George Herbert Walker Bush, whose grandchildren called him by that name. The restaurant offers eclectic dining featuring Texas favorites made with locally-sourced ingredients—a signature take on modern culinary Texas regionalism. Due to their local sourcing, the menu changes seasonally, sometimes even weekly. The restaurant features an open-fire hearth that cooks up delectable eats like wild boar, slow-cooked Iberico pork cheeks, and smoked Bandera quail. The building is perched between the watering hole with a zero edge detail to the water’s edge and a large porch with a wonderful view of Century Square’s outdoor plaza, an open-air green space where you can often enjoy music and events throughout the year. The glass box structure has custom chandeliers that feature the main seating booths, bar and open kitchen and prep table. One can reserve the prep table for a pure farm to table experience. The eclectic furniture and colors are inspired from cowboy shirts, denim jeans and leather cowboy belts a true Texas experience. Don’t forget to sneak a peek at the waiters’ socks, which pay homage to George Herbert Bush’s love for playful colorful socks.
